Your party and finger food platters will appeal by dressing
them with a bed of diced or whole lettuce leaves. Add
sauces
for dipping with *julienne carrots, *celery or
*cheese cubes.
Add toothpicks or serviettes if the portions are small or
hot and have have a helper or two take the food to your
guests rather than have them leave a conversation to go
hunting for it.
If the function is midmorning or afternoon, usually
4 to 6 portions per head.
At lunchtime or dinnertime, you will need 8
to 10 finger food portions per head.
An evening party which may run late into the night,
you will need approximately
12 portions per person.
